The “Colmè Extra Dry” is one of the most important products of Azienda Agricola Colvendrà. With the denomination of Conegliano Valdobbiadene Prosecco DOCG, vinified with Glera grapes manually harvested with a production yield of 13 tons per hectare, Colme’ has a yearly volume of around 80,000 bottles and it is classified as “Extra Dry” for its residual sugar content between 12 and 17 g/l.. This is a Prosecco with a clear personality to be enjoyed throughout the meal. It is born from vines that grow on ancient soils of sandstone and produced according to the Charmat method, with secondary fermentation in autoclave at controlled temperature. Straw-yellow colour with persistent and fine perlage, Colme’ has a delicate fragrance of apple, citrus, wild flowers and light mineral memories. The taste is lively structured and slightly sweet, fresh and pleasant to drink. The finish is coherent, long and intense, with pleasant citrusy aftertaste. Prosecco Colme’ is recommended for any time of the day, ideally as an aperitif or with pasta, shellfish dishes, hard cheese, or cured meat.

- Colour: clear straw-yellow with greenish tinges. Fine and persistent perlage
- Nose: delicate fragrance of apples, fresh fruits, pears, and wisteria flowers

- Vinification/Maturing: production yield 13 t/ha. After soft pressing of the grapes, the skin is separated and musts fermented at controlled temperature with inoculum of selected yeasts. Second fermentation (at lower temperature) occurs in stainless steel tanks with Charmat Method
- Ageing Potential: not suitable for ageing
- Food Match: ideal for any moment of the day and excellent as aperitif. Due to its residual sugar content (between 12 and 17 g/l), it is a great match for starters, seafood based dishes, and moderately sweet pastries too
